A special organic vegetable from your own garden! The Jerusalem artichoke (Helanthus Tuberorus) is a whimsically shaped tuber with a sweet, slightly nutty flavour. This forgotten vegetable is back. The Jerusalem artichoke requires almost no care and is very productive on poor soil. Plant the tuber in a strategic spot early in the spring. The plants can grow 1.5 to 3 metres high and cast a lot of shadow. Harvest the tubers from the first night frost until the end of the winter.
Plant the tubers 15 cm deep and 30 cm apart. Since the Jerusalem artichoke spreads easily (self-propagates), the creation of a deep partition is recommended. Give the hardy Jerusalem artichoke a spot outside in partial shade or full sun. After planting, take care to water the plant a bit every week.
