An herb with disinfecting properties! The flavour of hyssop (Hyssopus officinalis) is reminiscent of thyme. The leaves can also be used as herbal tea to fight off colds. Small, violet-blue flowers bloom from summer to autumn. The flowers have a minty flavour and attract bees and butterflies.
The plant is fully winter hardy provided the soil drains well. The hyssop loves to be positioned in full sun. The soil should be kept damp. Give it extra water during dry periods.

Water the winter savory as soon as possible after receiving it. You can take the following approaches. You can place the pot indoors temporarily in order to bring it outdoors at a later time, to your patio or decking, whether or not in a decorative pot. Or you could plant this perennial in a herb garden or border.
For inside:

  1. You can place the nursery pot in a beautiful flower pot. Select a flowe rpot with holes in the base and a matching saucer.
  2. You can also choose to place the nursery pot on a saucer in order to collect the water. In this way the water is able to drain away properly.
  3. Use a decorative pot in which the water from the inner pot is collected.
Place the flower pot in a warm, relatively light spot (no full sun).
For outside:
  1. Choose a warm, sheltered spot for the plant, whether or not in a beautiful pot or flower box.
  2. Replant the winter savory in a larger pot. Fill the flowe rpot with fresh potting compost. Remove the plant from the old pot. Place the root ball of the winter savory at the correct depth. Fill the pot with more potting compost and press down gently.
  3. Replant the plant in open ground.
Water generously, immediately after planting.


Only give mature plants additional water during dry periods. Make sure that surplus water drains away properly, because these plants do not like wet feet.
Plant winter savory near your (broad) beans or other beans because it prevents beans from being affected by black bean aphids.
Whether or not you use the leaves, it is a good idea to perform rigorous pruning in summer. This will rejuvenate the plant and stimulate the winter savory to grow more. For this, prune back the whole plant.
Herbs on your patio or decking.
You can place the pots with herbs outdoors from the middle of May. For this, you must harden off the plants by placing them outside for an hour longer each day, in a shady spot. After 5 days the plants will have become used to the conditions, and you will be able to leave them outside. Winter savory has a strong preference for a sunny spot.
Make it easy for yourself: place the pots near your kitchen door, so you will always have the herbsclose to hand when cooking.


Harvesting period: throughout the year.
The leaves, buds and flowers can be harvested. Harvest winter savory by picking young shoots and leaves. Woody stems are too tough to use, contrary to the green ones. Always leave the centre of the plant untouched. The best way of harvesting would be to use scissors or a knife. The flavour of this herb is hardly affected by flowering, so you can simply harvest from flowering plants. You can even use the flowers for drinks and desserts.
As long as the plant continues to produce new leaves/stems, you will be able to continue harvesting. In this way you will be harvesting from the same plant throughout the whole year!
